One of my favourite YouTube channels “serori vlog” shows Serori セロリ a guy who lives alone in an old house in Japan. I enjoy his slow living vlogs of making food and coffee. You can also find him on Instagram serori112

Although the food that he makes is not always vegan I was inspired by one of his vlogs where he made a pizza with rice mixed with egg.

I decided I wanted to try and make it with some left over rice I had in the freezer and my vegan omurice egg. It worked an absolute treat.

Think a combination of omurice, pizza and yaki onigiri.

I had a small bowl of left over Japanese rice in the freezer.  I often freeze rice and microwave it when I need it later if I don’t want to use all the rice I cook in my rice cooker. The pizza used about 1 and 1/2 cups of precooked rice.

For the egg I blended just two tablespoons of silken tofu with a teaspoon of potato starch 1/2 a teaspoon of turmeric a pinch of kala namak black salt, a teaspoon of nutritional yeast and two tablespoon of dashi.

Defrost the rice or use freshly cooked rice and add it to the egg mixture and mix it in gently.

In a small pan lined with parchment paper wiped with a little oil, spoon the egg mixture in to make a pizza shape.

Cook on heat until the base is crispy then place a plate over the pan and flip it over. Put the parchment onto a heatproof plate, (I used the same pan as it was cast iron) put the pizza crispy side down onto the plate. Top your pizza with tomato purée, a sprinkle of vegan cheese.

Then add veggies of choice. I used mixed bell peppers, sliced mushrooms and tomatoes and chopped green onion.

Add a drizzle of olive oil and place the pizza under a hot grill to cook the veggies and melt the cheese.

Serve on its own or with a fresh salad. Adding some fresh herbs and cracked black pepper to garnish the pizza.
